- 2 tbsp olive oil
- 8 skinless, bone-in chicken thighs
- 6 rashers streaky bacon, chopped
- 1 large onion, sliced
- 2 large cloves garlic, finely chopped
- 3 large leeks, sliced
- 650 g small charlotte potatoes, unpeeled but halved if large
- small bunch tarragon, roughly chopped, plus extra to serve
- 2 tsp wholegrain mustard
