
Golden pork stir-fry
Inspired by my love of the Thai dish pad krapow moo, this spicy little stir-fry is really quick to come together and great served simply on lettuce leaves. It’s also delicious with rice or noodles, and a fried egg on top makes it very nearly perfect. You can use any minced meat, but I do love pork and it allows the spicing to turn it the colour of warm summer sunshine.

Ingredients
- vegetable oil
- 4 fat cloves garlic, crushed
- 500 g minced pork
- 3 tsp ground turmeric
- 1 tsp chilli flakes, finely chopped, or 2 long red chillies, if preferred
- 1 tbsp caster sugar
- 2 tbsp fish sauce (alternatively season to taste with salt)
- 30 g fresh coriander, roughly chopped
- black pepper, freshly ground
- rice or lettuce leaves, to serve
