Ingredients
- 1 kg new potatoes, unpeeled halved or quartered if large
- low calorie cooking spray
- 1 large red onion, thinly sliced
- 4 ripe tomatoes, quartered
- 2 large courgettes, trimmed, halved lengthways and sliced
- 12 pitted black olives in brine
- 4 frozen skinless white fish fillets, thawed (cod, haddock or basa)
- 1 lemon
- 6 tbsp hot fish stock
- salt and freshly ground black pepper
- small handful of roughly chopped fresh parsley, to garnish (optional)
