
Prawn & spinach risotto
Delightfully light, but tasty dish. Really quick and simple to make. The spinach is hardly cooked at all, so keeps all its glorious goodness.

Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 mug risotto rice
- 2 mugs water
- 2 fish stock cubes
- 450 g king prawns
- 200 g spinach, roughly chopped
- ½ mug finely grated parmesan
