Pulled jerk BBQ sliders

Jackfruit is really showing off in this recipe with how close it comes to the “real thing!” Young green jackfruit is nothing like the sweet yellow jackfruit most folks are used to; young green jackfruit has all the characteristics to make an exquisite savory meal. To make these sliders, jackfruit is marinated in an iconic Jamaican jerk marinade then pan seared and oven roasted until tender, leaving it easy to pull apart, releasing all of the flavors it accumulated during the cooking process. Pressed between two toasted buns with coleslaw, this handheld meal will leave you impressed. Jerk pork is loved in Jamaica, and this spiced up jerk jackfruit is inspired by the island favorite.

Ingredients
- 2x 566 g cans young green jackfruit
- 3 tbsp Jamaican Jerk Marinade (store-bought or homemade)
- 3 tbsp high-heat cooking oil, divided
- ¼ tsp star anise powder
- 1 tbsp molasses
- 1 tbsp browning sauce (optional for darker color)
- 3 tbsp brown sugar
- 250 ml vegetable broth
- 8 sprigs fresh thyme
- 1 sprig rosemary
- 2 tbsp barbecue sauce of your choice
- 3 vegan brioche buns or vegan hamburger buns
- Nondairy mayonnaise, for dressing
- 180 g coleslaw
