
ThaiRoot vegetable Thai curry
A cheap and economical Thai curry. The root veg have a sweet taste that benefits from a little spice.

Ingredients
- 1 tbsp olive oil
- 50 g Thai curry paste (green or red)
- 750 g mixed root vegetables (such as carrot, swede, turnip), peeled and chopped
- 160 ml coconut cream (or 75 g creamed coconut, broken into pieces)
- 750 ml vegetable stock, made from stock cube
- 200 g rice
- salt and black pepper
