
Salmon and spring veg orzo
Use orzo or your favourite small pasta to make this speedy salmon supper for midweek

Ingredients
- 750 ml vegetable stock
- 1x 240 g pack salmon fillets
- 2 lemons
- 250 g dried orzo (or other small pasta)
- 1x 200 g pack Tenderstem broccoli, roughly chopped
- 1x 200 g pack sugar snap peas, halved on the diagonal
- 2 tbsp olive oil
- 1 tbsp clear honey
- handful of fresh herbs, finely chopped (we used dill, parsley and chives)
- 60 g soft goat's cheese, crumbled
