
Smoked paprika pork stew with peppers and potatoes
A goulash-style pork dish that makes a nice easy supper to serve to friends or family - just add crusty bread!

Ingredients
- 2 tbsp olive oil
- 2x 300 g pack extra lean pork medallions
- 1 large onion, chopped
- 1 red pepper, deseeded and diced
- 1 green pepper, deseeded and diced
- 1 clove garlic, crushed
- 1 tbsp smoked paprika
- 1 tsp caraway seeds
- ½ tsp chilli powder
- 250 g new potatoes, larger ones halved
- 1x 400 g tin chopped tomatoes
- 2 tbsp tomato puree
- chopped parsley
- fat-free natural greek yogurt and bread, to serve
