AsianSweet and sour tofu stir fry
The sweet and sour stir fry has become a very well known westernized Cantonese dish, which is especially popular when ordering take-out. It is quick and very easy to make, so especially good after a long and busy day.

Ingredients
Tofu
- 450 g block extra firm tofu, cut into 0.5 inch cubes
- 2 tbsp soy sauce
- 30 g cornstarch
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp vegetable oil
Sweet & sour sauce
- 120 ml pineapple juice, from a can of pineapple chunks
- 60 ml rice vinegar
- 55 g tomato paste
- 3 tbsp soy sauce
- 2 tbsp maple syrup
- 2 cloves garlic
- 2 tsp cornstarch
- 1 tsp freshly grated ginger
Stir fry
- 285 g rice, washed, drained
- 2 tsp vegetable oil
- 1 medium red onion, thinly sliced
- 1 large carrot, finely chopped
- 1 red bell pepper, thinly sliced
- 100 g canned pineapple chunks
