Steaming fish is not only a healthy way to cook it, it also ensures the fish stays moist. Wrapping this salmon up in parcels along with the greens and dressing means that each parcel is bursting with flavour and delicious cooking juices. It makes for a very quick and easy midweek meal.

Ingredients

  • 120 g jasmine rice
  • 100 g choy sum, halved and sliced
  • 3 baby pak choi, halved lengthways
  • 70 g brown shimeji mushrooms (or shiitake if you can’t find them)
  • 2 skin-on salmon fillets
  • 2 spring onions, thinly sliced, plus extra to garnish
  • 1 red chilli, sliced into rounds
  • thumb-sized piece ginger, peeled and cut into matchsticks
For the dressing
  • 2 tbsp soy sauce
  • 1 tsp runny honey
  • 1 tsp sesame oil
  • 2 cloves garlic, crushed
  • 1 lime, juice of
To serve
  • 1 lime, cut into wedges
  • coriander leaves, to garnish
