
Cajun-style chicken fillets
A bit like a Cajun version of takeaway chicken, these are filling and could easily be augmented to make a main meal if you add the coleslaw and garlic yogurt recipes. Make sure you cut the chicken into similar-sized pieces so they all cook evenly.

Ingredients
- 650 g skinless chicken breasts, cut into 12-14 strips
- sunflower or vegetable oil cooking spray
For the marinade
- 150 g plain yogurt
- Zest and juice of 1 lemon
- 1 tsp smoked paprika
- 1 tsp black pepper
- ½ tsp sea salt
- 1 tsp garlic powder
- ½ tsp English mustard powder
- ½ tsp dried thyme
- 1 tbsp olive oil
For the panko crumb
- 2 tsp garlic powder
- 1 tbsp freshly ground black pepper
- 2 tsp smoked paprika
- 1 tsp sea salt
- 80 g panko breadcrumbs
- ½ tsp English mustard powder
- 1 tsp dried thyme
