Carrot pepper pasta


Easy pasta recipes are a thing we all need to get on board with, whether you have kids, a large family, a tight budget or are incredibly time poor, or, like me, all of the above. In which case, this recipe is perfect. Made out of tinned carrots and flavoured to the nines, this simple sauce is stirred through with pasta, peas and prawns. It’s bright and delicious, but most of all, quick!

  • 300 g dried pasta
  • 100 ml olive oil
  • 3 cloves garlic
  • 2 tbsp coriander seeds
  • 400 g tin carrots, drained
  • 1 tsp salt
  • 2 tsp ground black pepper
  • 2 tbsp balsamic vinegar
  • 200 g frozen peas
  • 300 g cooked prawns
  • fresh coriander, chopped
  • red chillies, sliced
