- 8 chicken pieces or 1 whole chicken, jointed
- 1 large onion, chopped
- 1 red pepper, deseeded and chopped into large chunks
- 3 cloves garlic, crushed
- 225 g chorizo, skinned and sliced
- 1 tbsp tomato purée
- 1 tbsp thyme leaf, chopped
- 150 ml white wine
- 850 ml chicken stock
- 400 g long grain rice
- 2 tbsp chopped parsley
