
MexicanPork & chorizo enchiladas
his Mexican one-pot dish is a delicious and easy, make-ahead family meal - serve half and freeze the rest for another day.

Ingredients
- 1 tbsp olive oil
- 2 large onions, halved and thinly sliced
- 3 cloves garlic, chopped
- 1 tbsp ground cumin
- 2 heaped tsp smoked paprika
- 2 tsp cinnamon
- 2 red chillies, halved deseeded and sliced
- 500 g pork mince
- 2x 200 g packs cooking chorizo sausages, removed from their skins
- 680 g bottle passata
- 1 pork or chicken stock cube
- 4 peppers - 2 red and 2 green, deseeded, quartered and sliced
- 2x 400 g cans borlotti beans, drained
- 1x 30 g pack coriander, chopped
- 1x 500 g tub fromage frais (not fat-free)
- 1 large egg
- 2x pack of 8 soft corn tortillas
- 140 g mature cheddar, grated
- green salad, to serve
