
Seafood orzotto
Our seafood orzotto, or risotto d'orzo, is a great healthy midweek meal for two as it's under 500 calories and takes just 30 minutes to cook

Ingredients
- 1 tbsp olive oil
- 1 bulb fennel, trimmed and diced
- 1 echalion shallot, finely sliced
- 1 clove garlic, crushed
- 150 g orzo pasta
- 100 ml white wine
- 450 ml fish or vegetable stock, made using 1 stock pot or cube
- 100 g baby leaf spinach
- 200 g raw seafood selection, defrosted
- zest of 1 lemon, juice of 0.5 and wedges to serve
- ½x 20 g pack dill, chopped (reserve some fronds for garnish)
