Ingredients
- 450 g small heirloom tomatoes, seeded and cut into wedges
- salt, to taste
- ¼ cup olive oil
- 3 large cloves garlic, minced
- 1 orange bell pepper, seeded and thinly sliced
- 1 yellow bell pepper, seeded and thinly sliced
- 1 courgette, quartered lengthwise and sliced horizontally
- 450 g green beans, trimmed and cut into 1 inch lengths
- pinch of saffron
- 2 tsp smoked paprika
- 400 g arborio rice
- 4 cups vegetable broth
