  • 450 g small heirloom tomatoes, seeded and cut into wedges
  • salt, to taste
  • ¼ cup olive oil
  • 3 large cloves garlic, minced
  • 1 orange bell pepper, seeded and thinly sliced
  • 1 yellow bell pepper, seeded and thinly sliced
  • 1 courgette, quartered lengthwise and sliced horizontally
  • 450 g green beans, trimmed and cut into 1 inch lengths
  • pinch of saffron
  • 2 tsp smoked paprika
  • 400 g arborio rice
  • 4 cups vegetable broth
